Turkey Sausage & Peppers

3/4 lb Italian Turkey Sausage, cut into 1/2-inch slices
1 red bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
1 onion, sliced
1/4 cup chicken broth (I used reduced sodium)
3 garlic cloves, minced
1/4 teaspoon crushed red pepper
1/4 teaspoon dried oregano
Spray a large nonstick skillet with nonstick spray; heat. Cook the sausage, stirring frequently, until no longer pink, 4-6 minutes. Add the bell peppers, onion, broth, garlic, red pepper, and oregano; cook, stirring frequently until most of the liquid evaporates, about 5 minutes. Reduce the heat and simmer, covered, until the peppers are tender, 3-4 minutes.
Per serving (about 1 cup):
145 calories

YUM! That recipe sounds oh-so-gewd! :-D Its great when you love cooking, I love it too - but I didn't used to, and it was hard to eat healthy when you expected everything to come out of the microwave in 2 minutes.
