Case of the Mondays

Ugh, between staying out on Friday night til 1:30 am and not getting to sleep last night til Midnight (IBS was HORRIBLE this weekend) - I'm EXHAUSTED!

Breakfast:
1 cup cheerios with 1 cup skim milk and 3 tsp sugar - 6 pts

Lunch:
Roast Beef & Swiss on Pumpernickel/Rye swirl bread with 1 tsp mayo and a ton of banana peppers - 8 pts
1 cup snow peas with 1/2 cup bell peppers, 1 tsp sesame seeds, and 1 tsp sesame oil - 3.5 pts

Dinner:
1 cup spaghetti with 1/2 cup Roasted Garlic and Carmelized Onion Sauce, and 3 turkey meatballs - 10.5 pts
1 piece Sweet Italian Bread - 3 pts

Snacks:
2 pieces Lemon Cake with Lemon Icing - 2 pts
1 cup coffee with 1/4 cup Vanilla Chai Spice creamer - 3.5 pts

Points Values Used: 33.5
Points Values Remaining: 3.5

WW - Week 1

Tonight was my 2nd WW meeting - Woot! I only lost 1 pound, but considering the fact that my period JUST started - I'm putting atleast another pound or 2 to water weight. Not bad :)

Has anyone else noticed all the 100-calorie snacks that are out these days? Recently, I've had:
  • Quaker Mini Delights - Chocolatey Drizzle: picture mini rice cakes drizzled with CHOCOLATE - how could you not love them? They're actually 90 calories per pack, but still! (Also, props to them for using the world Chocolatey)
  • Oreo Thin Crisps: Just like yummy little crispy Oreo cookies (without the filling)
  • Jell-o Fat Free Tapioca Pudding: Yum!
  • Keebler Right Bites Grasshopper Cookies: taste just like thin mints!
  • Hershey's 100 Calorie Bar - Dark Chocolate: Heaven!

Of course, you can still over-indulge on these - but it helps me taking only 1 or 2 to work with me ;)

Breakfast:
2 packets of Cinnamon Roll Oatmeal - 6 pts

Lunch:
Leftover Turkey Sausage & Peppers (I think it was more like 1 1/2 servings this time) - 4.5 pts
1/4 loaf Sweet Italian Bread - 3 pts
1 bottle - Honest Tea - Kashmiri Chai - 0.5 pts

Dinner:
Turkey Burger with wheat roll, 1 slice cheddar cheese, and 2 pieces of turkey bacon - 9.5 pts
1 serving Ore-Ida Crinkley fries - 2 pts
1/4 cup Honey Mustard - 2 pts

Snacks:

1 serving Quaker Mini Caramel Rice Cakes - 1 pt
1 small (tiny) Oatmeal cookie - 1 pt
1 cup coffee with 1/4 cup Vanilla Chai Spice creamer - 3.5 pts
1 Hershey's 100-Calorie bar - Dark Chocolate - 2 pts

I LOVE cooking!

So I tried my first recipe from my new cookbook and I'm VERY please - not only were the servings HUGE, but it was SO YUMMY and low enough in points that I ate it on some sweet italian bread :)

Breakfast:
1 cup cheerios with 1 cup skim milk and 3 tsp sugar - 6 pts

Lunch:
Roast Beef & Swiss on Pumpernickel/Rye swirl bread with 1 tsp mayo and a ton of banana peppers - 8 pts
1 serving Fresh Express Lite Caesar Salad - 2 pts

Dinner:
1 serving Turkey Sausage & Peppers - 3 pts
2 servings Sweet Italian Bread - 6 pts

Snacks:
1 serving Quaker Mini Caramel Rice Cakes - 1 pt
1 small (tiny) Oatmeal cookie - 1 pt
1 cup coffee with 1/4 cup Vanilla Chai Spice creamer

Total Points Used: 33.5 (3.5 pts left for a snack - WOO!)


Turkey Sausage & Peppers
Points value: 3
Servings: 4

3/4 lb Italian Turkey Sausage, cut into 1/2-inch slices
1 red bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
1 onion, sliced
1/4 cup chicken broth (I used reduced sodium)
3 garlic cloves, minced
1/4 teaspoon crushed red pepper
1/4 teaspoon dried oregano

Spray a large nonstick skillet with nonstick spray; heat. Cook the sausage, stirring frequently, until no longer pink, 4-6 minutes. Add the bell peppers, onion, broth, garlic, red pepper, and oregano; cook, stirring frequently until most of the liquid evaporates, about 5 minutes. Reduce the heat and simmer, covered, until the peppers are tender, 3-4 minutes.

Per serving (about 1 cup):
145 calories
5 grams fat (o grams trans fat)
2 grams fiber
15 grams protein

Teriyaki Salmon (Except, being the genius that I am, I mistakenly used Worcestershire sauce instead *DOH*)
1 serving Alexia Olive Oil, Garlic & Rosemary Oven Fries

snacks:
Coffee with Vanilla Chai Coffee Creamer
1 Mcdonald's Fruit & Walnut Salad (snack size)

totals:
calories: 1,784
carbs: 187
fat: 69
protein: 88

And this is why I try to stay to the lower end of my calorie range. That way, I can mess up a TINY bit and still be alright for the day :)

Btw - it took MAJOR will power to eat my F&W salad while my darling husband snarfed down right-out-of-the-fryer french fries!!!

The Calm Before the Storm

Actually, it's the calm before the cold front. It's supposed to get down to 60 degrees F tonight and tomorrow's high is supposed to be 58, as opposed to today's high of 84! Crazy weather.

I'm a little on the high side of my range. I've been fuming about the parental situation all day - and thought I'd had enough room to have a soda. Oops. On the bright side, since my goal is to stay to the lower side of my calorie range, I have room to goof within reason ;)

breakfast:

2 Jimmy Dean Fresh Taste Fast! Turkey Sausage patties
1/2 cup syrup

1 pork loin chop with 1 serving pork shake n bake
1 single serving Mott's Cinnamon Applesauce cup
1/2 acorn squash, baked with 1 tbsp brown sugar, 1 pat of butter, and a dusting of cinnamon
1 can Sprite

snacks:
My obligatory coffee with Vanilla Chai Coffee Creamer

Ok, ok, ok - so my "free Saturday" was actually 2 days long. No use crying over spilled milk right? I probably didn't do THAT horribly yesterday, aside from the Boston Cream Pie and oodles of soda.

Today however, I am on track:

Right in the middle of lunch, my darling husband sends me this picture (DO NOT CLICK IF YOU'RE EATING!)Yuck.

Side note: I ADORE that expression on his face ;)

I'm waiting for the man of the hour to come home so we can figure out what to eat for dinner.

I think I'm getting mean in my old age. James gets annoyed when we watch The Biggest Loser.

Me: I'd KILL to be 225!
James: You do realize that she's half a foot shorter than you, right?
Me: Oh.. *pout*
That happens everytime we watch it. I can't get over the fact that some of these girls may WEIGH less than I do, but I'm THINNER than they are. Bodies are strange things indeed.

Btw, Pam is absolutely A-DOR-A-BLE! I SO want her to win :)

1 serving Barilla Plus Thin Spaghetti w/ 3/4 cup Prego Tomato, Basil, & Garlic Sauce, and 4 turkey meatballs.
1 can Vanilla Coke (I'm broke and out of water until tomorrow)

snacks:

Caramel Cream Jello 100-Calorie Pudding Cup

6 Years and Counting


So, we decided to forgo dressing up for our Anniversary dinner. My period decided to start the day before, so needless to say, dressing up was the last thing I wanted to do that night. I ended up picking James up right from work and going from there, since we had tons of cleaning to do before we left for the beach the next day.

We went to the Cheesecake Factory. Mmmmmm - cheesecake.

How bad were we?

Appetizer:
Fried Macaroni & Cheese Balls (Holy Crap! They were GOOD!)

Dinner:
James - Beer Battered Fish & Chips
Kelly - Kobe Beef Burger with Sauteed Mushrooms and Onions (Yum!)

Dessert:
James - Chocolate Peanut Butter Cookie Dough Cheesecake
Kelly - Tiramisu Cheesecake (Again - YUM!)

After-Dinner drinks:
James - Long Island Iced Tea
Kelly - Georgia Peach (Absolut Vodka, Peach Liqueur and Peaches Swirled with Raspberries)

We don't usually drink, so this was a special occasion ;)

Ugh - I was miserable afterwards - but it was SO worth it, hehe.

  • 1 single serving Mott's Cinnamon Applesauce cup
  • 1 cup smashed red potatoes with around 1/4 cup of low fat sour cream and chives

Ooooh, I forgot yesterday - I marinated the pork chops for 24 hours Lemon Pepper marinade. They were SO tender! I've frozen the other 2 for when I get back from the beach :)

  • Meatballs, Frozen, 3 oz

  • 1 100 Calorie Pack Ritz Snack Mix
  • 2 mini York Peppermint Patties

James made me feel like a total schlub tonight by doing the 2-mile Walk-away-the-pounds workout while I was playing on the computer. Bah.

My depression is rearing it's ugly head right now, so my first instinct is to go for the food. The other day at the grocery store, I was craving something sweet - so, instead of buying something very yummy, but very bad, I dove into the bag of sugar snap peas that I got for lunch and ate half the bag on the way home. Yummy - nothing like overindulging in some veggies ;)
